Very Special Blueberry Muffins

Blueberry Muffins Recipe

This is one of the best Blueberry Muffin Recipes you will ever find anywhere and the really great thing about this recipe is that you can use any other fruit you would like and have what ever kind of muffins you could ever want. If you like Pumpkin you can use pumpkin instead of blueberries and have wonderful pumpkin muffins. You can also make wonderful cranberry muffins or apple muffins with this recipe. With your apple muffins you will want to peel I would suggest Granny Smith Apples and then run the cut up apples through the food processor. You will want to end up with 2-3 cups of finely diced apples if you use apples instead of blueberries in this recipe. Okay now that we have all that great muffin information out of the way lets make some blueberry muffins that you and your family are sure to love.

You will need for your blueberry muffins recipe.

1. 12 Large Eggs

2. 2 Teaspoons Salt

3. 2 Cups of Vegetable Oil

4. 6 Tablespoons Baking Powder

5. 3 Cups Of Sugar

6. 3 Cups Of Milk

7. 8 Cups Plain All Purpose Flour

8. 3 Cups Of Blueberries

All your ingredients need to be at room temperature and you need a rather large bowl and a hand mixer. Start with your dry ingredients and when you have all them in your bowl start to add your wet ingredients and start to mix with your hand mixer on low. Gradually work your hand mixer speed up to medium and mix until your batter is smooth.

You can use cup cake papers in a muffin pan or you can spray your muffin tins well with vegetable oil cooking spray and then fill your muffin cups almost to the top but allow room for your muffins to expand as they cook. You should be able to cook your muffins in 30-35 minutes in a 350 degree oven. When you stick a toothpick into the center of a muffin and it comes out clean your muffins are done. Some people like cream cheese icing on the blueberry muffins. And below is a great recipe for cream cheese icing.

You will need for your Icing

1. 2 8 oz. Packages Cream Cheese at Room Temperature.

2. 1/2 Cup Butter at Room Temperature.

3. 2 Cups Sifted Confectioners Sugar.

4. 1 Teaspoon Vanilla Extract.

Mix all of your ingredients together very well in a large bowl with your hand mixer. Mix your ingredients together until they are smooth.

And as I said above you don't have to make blueberry muffins. You can use the above recipe and also make strawberry muffins, pineapple muffins, blackberry muffins and more. What ever kind of fruit you want to make your muffins from will be simply delicious if you just follow the above simple recipe.
