Vietnamese Lemongrass Ground Beef Satay Recipe (Bo Nuong Xa). How to Make Tasty Vietnamese Style Satay!

Bo Nuong Xa

Are you looking for new way to cook ground beef instead of burgers or meat loafs ?  If you are a kind of adventure then you may like  lemongrass ground beef satay or bo nuong xa, Vietnamese style of satay. This dish is a meal by itself or as a side dish. Its perfect for lunch or the afternoon beer on sunny weekends.

Traditional Vietnamese ingredients gives the beef a distinct flavor  which is broiled or grilled on skewers.  This satay is succulent, moist and flavorful. Use ground beef with some fat on it to get juicy satay. I prefer grill it on charcoal grill to give true Asian flavor. 

As with most Asian dishes there are many variations of this dish found throughout Vietnam but I find this one the easiest to prepare. Here is my easy Bo Nuong Xa or Vietnamese lemongrass ground beef satay recipe. You just need few minutes to transform simple ground beef into Vietnamese indulgence satay. Bon appetit. 

What You Need


3 garlic, finely minced

1 medium onion, chopped

1/2 cup finely minced lemon grass

1 1/2 lbs ground beef

1/2 tsp black pepper

1 tsp vegetable oil

1 tbsp cornstarch

1/2 tsp salt

1 tsp brown sugar

1 tbsp fish sauce

3 scallions, finely minced

12-15 bamboo skewers, soaked in water for about 30 minutes

How to Fix

  1. In a food processor, pulse lemongrass, onion and garlic to make a rough watery paste. Set aside.
  2. In a mixing bowl, combine lemongrass paste, ground beef, pepper, vegetable oil. cornstarch, salt, brown sugar, fish sauce and scallion. Knead it with hand. Cover with plastic wrap and put the meat in the fridge for about 30 minutes.
  3. Divide the beef mixture into 12 equal meatballs about 2-inch diameter. Rub your hands with oil and gently press meatballs on the skewer to form about 6-inch long sausage. Make sure that the beef mixture is cold to make it easier threading it on skewers. Do with the remaining ingredients. 
  4. Place beef satay on the grill. Make sure they are very well brushed with oil. Do the same with the grill grate to prevent sticking satay on it.   Grill them for 3-5 minutes or until they are cooked through and golden brown. Turn occasionally if it is needed. You can also use oven to broil it. Remove from the heat and serve with hoisin sauce.
