Vietnamese Pancake (Banh Xeo)

Vietnamese pancake is one of my favorite dish of all! I bet it would be yours too after you had a bite out of it. Vietnamese pancake is a dish that has been passed on from my parent grandparent and great grandparent and so on. There are many types of way people were taught to cook it. Some uses turkey, beef, pork, shrimp, fish and so on. But for my family, we uses turkey and pork. My mother has taught me how to cook Vietnamese pancake since I was about 12 years old. Therefore I thought it would be very nice to share some of it with you!

First you needed
1pkg of Vietnamese pancake ready mix…
3 ½ cup of water
1 cup of coconut milk
½ cup chopped green union

For filling…

3lb of ground pork…

Other people have done differently and some would like to add shrimp and it is really up to you whether you like shrimp or not.

Accompaniments include basil, mints, mustard leaves, mango leaf, salad or lettuce.
For dipping include fish sauce and I’ll tell you my mother secret recipe.

For the pancake, mix the pancake with a whisk add coconut milk and water. Chopped green onion until it is well combined and allow it to rest for about 30 minute. During that thirty minute rest for the pancake, let start doing the filling. Grab a frying pan and heat it. Heat two teaspoon of oil. Toss in the ground pork and make sure it is fully cook. After it is fully cook, put in the bean sprouts and mix them for about 1 minute. Make sure the sprout is not fully cook because the sprout will bring the crispy feeling in your mouth when your eating. After that, grab a plate and put it to a side. Using the same pan, grab the pancake mixture and gently swirl it in the pan. Once it start to bubble and the bottom look crispy, add the ground pork with sprout that you cook on top of it for the filling and fold it in half. Leave it for about 3 to 4 minutes until fully cook and put it on your plate to serve with lettuce, cucumber, salad, basil leaves or mint.

For the dipping, these are my mother secret recipe which was passed on from our ancestor…you need:

Boiled hot water…
Fish sauce
Chopped garlic

First you put a fish sauce in a bowl about 4-5 tablespoon. Then add 2 teaspoon of sugar…
After that add hot water and stir to bring a light taste of sweet fish sauce. Make sure you add chopped garlic as well.

      I will take this and learn. By the way just looking at the picture, already make me hungry...let me go grab something just to fell up my stomach...
