Wild Mushroom & Spring Mix Pizza
Ingredients;
- (One) 1 prepared pizza crust, (ie Boboli), thin or original crust
- two (2)-8oz pkg mixed wild mushrooms
- six (6) minced shallots
- three (3) cups fresh arugula or, spring mix leaves
- four (4) oz fresh mozzarella cheese
- 1½ cups freshly shaved Pecorino cheese
- one (1) tsp kosher salt
- one (1) tsp freshly ground pepper
Instructions;
- Preheat oven to 500 degrees Fahrenheit;
- Drizzle olive oil on a prepared pizza crust such as Boboli thin crust pizza crust;
- Slice thin slices of fresh mozzarella (about 6 slices); place on pizza crust; sprinkle approximately ¼ cup of shaved Pecorino cheese on pizza crust, as well;
- Rinse mixed wild mushrooms in colander; cut stems, as needed;
- Drizzle olive oil in a medium-sized, non-stick pan over medium-high heat; add minced shallots and wild mushrooms; sauteé for approximately 6-8 minutes; sprinkle with fresh ground black pepper to taste;
- In a medium bowl, mix 3 cups of fresh arugula (or, spring mix leaves) with lemon juice and kosher salt;
- Place pizza crust covered with the 6 fresh mozzarella slices and shaved Pecorino cheese in preheated oven for approximately 10-12 minutes;
- When pizza is heated through and the mozzarella slices and shaved Pecorino cheese have melted, remove pizza from oven;
- Cover with spring mix leaves (or fresh arugula) and top with the cooked wild mushrooms;
- Top pizza with freshly shaved Pecorino cheese and serve while hot;
- Yield: Six (6) slices;
