Yields: Makes 2 large round loaves

Whole grain sourdough soda bread

  • 4 cups whole wheat flour, I like King Arthur's brand
  • 1 cup King Arthur's Harvest grains, or 1 cup of oatmeal ( see text for more ideas)
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1 and 1/4 cup raisins, or currants, but you can omit either if you prefer
  • 1 and 1/2 cup water
  • 1 and 3/4 cup whole wheat sourdough, or buttermilk or yogurt
  • 2 tablespoons honey

Vegan whole grain sourdough soda bread

  1. Turn oven on to 375 degrees.
  2. In a large bowl combine flour, baking soda, baking powder, and salt. Using a whisk or fork blend all the ingredients and then add your raisins or currants. Set bowl aside.
  3. Combine the liquid ingredients, water, sourdough or buttermilk and water. I find it's easier to use a large glass measuring cup. Stir all the liquid ingredients together and then add to dry ingredients. Mix everything together until it forms a soft dough.
  4. Have a large baking sheet with either parchment paper, or a sil-pat, oiled and ready. Loosely shape 2 rounds of dough into equal sizes on your prepared baked sheet--like two huge cookies. Using a dough lame or sharp knife, score an "X" on both loaves and place into the 375 degree oven for 35 minutes or until golden brown. After baking, allow the loaves to cool for at least an hour before you cut into them.

I have to admit that this recipe was a complete accident. I was home one wintery afternoon making soup and wanted a bread to go with it. My husband craves fresh bread and I love to make it for him, but to make my kind of bread, you would need a least a day or two. I thought well, I could whip out crackers pretty quick, but that wouldn't be quite the same. Remembering a trip to Ireland few years ago, my husband and I virtually lived on their tasty soups and Irish soda bread. But what's a girl to do if she just doesn't have buttermilk on hand? Well, I always keep a whole wheat sourdough in the fridge! Let's see what happens! The bread turned out great and the leftovers I froze and made into morning toast. I have to say the toast was even better than simply the bread!

Cooks notes: If you are vegan, just switch out the honey for a suitable sweetner. I also wanted to comment on the King Arthur's Harvest grains. They are a mix of whole wheat groats, wheat flakes, rye flakes, sunflower kernels, flax seed, poppy see and millet, so any of these can be added to the bread! The bread is also a bit shy in salt and oil so you may want to add a 1/4 teaspoon more of salt if you have a salty palate. If you want your bread a bit more moist, you could add an egg, or 1/4 cup more coconut oil. If you don't like dried sweet fruit in your bread you can leave it out or add a cup of walnuts for added crunch.

      Morning Peri.

      This sounds interesting and I interested to find out it's taste with the honey.

      I'm not a veggie, vegan, or what ever you call themselves. In fact I'm just an ordinary guy that enjoys baking his own bread. I'm going to give this one ago without the raisins though.

      My favorites are Irish Soda bread (so easy), Irish Farls or the many German style multi-corn breads.
