How to make a great wing sauce recipe, I use Franks Red hot wing sauce as the base to make the buffalo wing or boneless wing taste hot and saucey. The standard is to use a vinegar-based cayenne pepper hot sauce mixed with butter or margarine and voila you have a great wing sauce. Up until a few years back that's all I would use and it was a good buffalo sauce, until a great friend of mine, Reggie B. turned me on to the best wing sauce I have ever tasted. The creation came from a very creative Chef, his wife. Reggie B's wife worked at a fancy Downtown establishment in Fort Wayne Indiana where she would create some not so formal entrees for the Lunch crowd, buffalo wings were a big hit, however being such a great restaurant you couldn't just serve a regular wing sauce, she had to be creative and create something special and unique, and that's just what she did. A few years back I was able to finally get a hold of the wing sauce recipe from her and started creating it myself, What I'm about to share with you is my version of her sauce recipe. (Her version is top secret) Let's start out with what you will need to make this very special wing sauce.

What you will need
This wing sauce is a nice blend of sweet and hot, to make it you will need a few ingredients that you can buy at about any grocery store.
- 1 cup of Franks Red hot.
- 1 stick of butter or margarine
- 1 tsp of minced garlic or fresh garlic cloves.
- 1/4 cup of light brown sugar (less or more depending on how sweet you like it), I would recommend starting out with less, you can always add more.
- 1 tablespoon of worcestershire sauce.
Below are easy step by step instructions and the difficulty level is rated very easy, So if you want to grab your measuring cups, spoons and a small saucepan I will meet you down at step 1.

OK, this is the most difficult step and most important step so listen close. You need to pour Franks red hot sauce into a measuring cup until you reach 1 cup. (don't mind the tomatoes in the picture, I just thought they looked good for decoration and they really do!)

I know you didn't have a problem with step 1 so we will continue, pour the cup of hot sauce into the small sauce pan. Congratulations! we can move on

The butter, you can use real butter or margarine, I choose to cut the butter into 8 slices just because it melts a whole lot easier, so go ahead and slice up your cold butter and add it to the wing sauce in the pan.

We now add the brown sugar to the sauce pan. I would start out with 1/8 cup of brown sugar if you want just a touch of sweet with more heat, however I use 1/4 cup. You don't have to pack the 1/4 cup down just fill it up farley loose , level it out and pour it into the wing sauce.

Now you are ready to add the 1 teaspoon of minced garlic and the tablespoon of Worcestershire sauce to the sauce pan, once complete you can place the sauce pan on the stove at low to medium heat, stirring frequently. Make sure you don't leave unattended or the wing sauce will scorch and you will have to go back to step 1 or order out for diner because you just ruined the sauce!
Slight rolling boil
You will want to stir the wing sauce on low to medium heat until you reach a slight rolling boil, once at boil stir frequently for about 2 minutes, you will notice the sauce changing color a little and slightly expanding this is good. After about 2 minutes you may turn off the heat.
Set the timer
You will now want to make sure the heat is turned off and the sauce pan is removed from the stove if you are using an electric stove. Set a timer for about 30 minutes and cover the sauce pan. This wing sauce recipe will make about a cup and a half of sauce.

How about a homemade Hot sauce? OK I have given you a great wing sauce recipe made with a standard buffalo hot sauce, Franks red hot. If you are the type of person that likes to make everything from scratch here is a bonus for you. Homemade red hot sauce This will take you about 35 to 45 minutes(which is why most people just buy there hot sauce from the store, but if you are feeling froggy, go ahead and jump!)
- 11 or 12 extra ripe red jalapenos or 20 Tabasco or Serrano chilies sliced thin.
- 3/4 cup diced onions
- 1 1/2 tablespoons minced garlic
- 1 teaspoon paprika
- 3/4 teaspoon salt
- 1 teaspoon olive oil
- 2 cups of water
- 1 cup distilled vinegar
How its made
Mix the peppers, onions, salt, garlic, paprika and olive oil in a non stick sauce pan over high heat. Sauté for about 3 minutes. Add the water and cook an additional 20 minutes or until peppers are soft and most of the liquid has evaporated. (caution keep a fan on or windows open for ventilation, very strong to the eyes and nose) Remove the pan from heat and allow to sit until hot sauce reaches room temperature. In a blender or magic bullet (I recommend the magic bullet) blend the mixture for about 20 seconds or until smooth, carefully add the vinegar and blend a few more seconds to make sure you have the sauce well blended. Now you are ready to taste the buffalo hot sauce, you may want to add more salt or garlic depending on the flavor. Next you can strain the sauce in a fine mesh sleeve, once strained pour the hot sauce into a bowl or bottle and their is your homemade hot sauce. Now if you want to make that into a wing sauce recipe you would just start back at step 1 above using your homemade buffalo hot sauce instead of Franks red hot sauce.
Teriyaki wing sauce recipe
Teriyaki Wing Sauce recipe and Marinade
Here is a great recipe for a Teriyaki wing sauce. Add all ingredients into a medium sauce pan, bring the contents to a boil, reduce heat and simmer 2 minutes stirring frequently, turn of the stove and you are ready to dip your chicken wings, or if you prefer let the sauce cool and marinate your chicken or steak.
1/4 cup soy sauce
1 tablespoon honey
3 tablespoons orange juice
1 tablespoon dark brown sugar
1 teaspoon Asian (dark) sesame oil
1 garlic clove minced
1 tablespoon minced peeled fresh ginger
This recipe tastes great on chicken wings or for a marinade on boneless chicken breasts and steak
