Wow! This Elk Patty Tastes Amazing

Yields: Serves 6 people 5 ounce Elk patties

Utensils needed

1. Sharp knife

2. A mixing bowl

3. Cutting board

4. Measuring cups and spoons

5. Metal spatula

6. A hot flat top grill or frying pan

  • 2 pounds Elk, Ground
  • 1 cup Old fashioned oatmeal, Steel cut uncooked
  • 1 stick Raw celery, Chopped small
  • 1/4 of Large white onion, Chopped small
  • 3-4 cloves Raw garlic, Chopped small
  • 1/2 tsp Kosher salt
  • 1/2 tsp Black pepper
  • 1&1/2 tsp Chipotle chili pepper, Ground seasoning
  • 1/2 cup Worcester shire sauce

A great experience

Once a year I become a camp cook at a remote location in the center of a potato field. I love doing this, it's hard work and usually full of fun. Often much of the food comes in by donation and our job at camp is to insure no one goes hungry. This year lots of game meats were donated ground Elk being one of them. "How do I get everyone to eat these for breakfast since I do not have bacon?" I asked myself. Checking the camps supplies and my traveling picnic basket of seasonings I came up with these breakfast patties. Everyone loved them and I had to triple the recipe for the next morning.

Now I choose to turn them in breakfast patties and pretend they were some kind of sausage, and it worked. Adult and kids both enjoyed them. If you choose to serve them as a burger which I would do as well add cheese a pepperjack or provolone would be great. Lettuce and tomato on a bun, perhaps add a pineapple ring as well. Think I might be making myself hungry right now.

Making the raw Elk patties

  1. Chop onion very fine toss into the bowl
  2. Chop celery very fine toss into the bowl
  3. Smash and chop garlic very fine toss into the bowl
  4. Add salt, pepper, celery seed and Chipotle seasoning to the vegetables in the bowl and coat with the seasoning
  5. Put in the ground Elk meat
  6. Add the uncooked steel cut oats
  7. Add the Worcestershire sauce
  8. Mix thoroughly with your hands
  9. Patty into 5 ounce portions
  10. Place on the grill or pan until cooked to the desired temp. internal temp of 125-135 degrees

I have to say with the other camp helpers I did request when they took a bite and we're amazed by the taste, that they had to jump up and down or run in circles praising the elk patties while saying I was an amazing cook. Every cook likes to get praised, 2 of them actually did which kept me smiling the rest of the day.
