Yummy Chocolate Covered Grapefruit Strips

This may sound like an odd combo to like, but try it-it is yummy!

Use three grapefruits and slice in halves. remove the pulp and white skin as much as possible. Place the peels in a large pan dilled with water and bring to boil. As soon as it boils, drain and repeat two more times.

 Add 2 and two-thirds cups of sugar, 1\3 cup of light corn syrup, 2 cups of water, all into a sauce pan and bring to boil with medium high heat. After boiling is reached, put on simmer for 1 hour until the peels are tender and translucent. Remove  them heat and let grapefruit sit in the syrup overnight in the fridge.

On day 2, line the baking sheet with waxed paper and place a wire cooling rack over it. Drain peels and place on the cooling rack Allow to dry for 2-3 hrs. Place 1 cup of cocoa powder and 2.5 cups of tempered chocolate in two separate bowls. Line the baking sheet with wax paper again and cut peels into 1\4 inch wide strips. Toss strips in cocoa powder and shake off excess. Dip in tempered chocolate and arrange them on the baking sheet, letting set for 1 hr.

Now eat them.
