Jicama and Fennel SALAD
Delicious raw vegan slaw
This is a delicious slaw recipe that is refreshing and delicious. Not to mention healthy, and pretty easy to make. If you love going on picnics, or attending barbecues this is great. You do not have to be raw vegan to enjoy this tasty slaw, you can take this along to a non-raw barbecue and everyone will love it! So, grab these ingredients and make this delicious jicama and fennel raw vegan slaw.
Note: Jicama is not readily available everywhere so, you could use a turnip or parsnip instead.
½ cup cashews
3 tablespoons lime juice
1 teaspoon lime zest
1 teaspoon salt
Water (for sauce)
1 cup jicama, grated and peeled
1 cup fennel bulb, grated and peeled
1 cup green cabbage, shredded
1/ 4 cup poppy seeds
1. Put the cashews, lime juice, lime zest and salt into a blender. Blend on full power until smooth. Add the water gradually until it looks something like whipped cream.
2. Grate the jicama and fennel, shred the cabbage, and put it into a large salad bowl. Now, pour the cashew mayo over the vegetables and add the poppy seeds. Mix everything together thoroughly until it resembles coleslaw.
