Straight from the Cauldron
This is my own recipe. Any time I make soup, it's like the American Melting Pot..."bring your beef, your crunchy veggies, your tummy warming broth," etc. I just throw it all together and see what materializes! This is actually more like what Rachel Ray would call a "Stoup", half soup/half stew.
1 lb of lean ground beef
3 large colored peppers, sliced
1 medium onion, chopped
8 oz of sliced mushrooms
2 tsp garlic powder or to taste
64 oz of chicken broth
2 cups of water
1 tablespoon chili powder or to taste
1/2 cup of elbow macaroni
Completely brown the ground meat in your large dutch oven or pan. Stir in the peppers, onion, sliced mushrooms, garlic, and chili powder, saute together until vegetables are cooked and soft. Add broth and water and bring to a boil. Then turn down heat and simmer for 1/2 hour with lid on. Add elbow macaroni and cook until al'dente. Serve topped with shredded cheese, if desired.
