Delicious Raw Vegan Pico de Gallo

Pico de Gallo is a delicious Mexican salsa that you can literally make in minutes. You can have it as a side dish, and you can use it to top tortilla corn chips. You can also use it in sandwiches and in wraps. Here is a delicious raw vegan Pico de Gallo recipe that you can make in minutes.


2 cups seeded and diced tomatoes

1/2 cup diced yellow onion

1/4 cup finely cilantro

1 serrano or jalapeno pepper, seeded and finely minced

2 tablespoons lemon juice

1/2 teaspoon sea salt


Put all the ingredients in a bowl and mix until everything is combined. Leave to sit for about an hour to allow the flavors to combine. Enjoy!

Soak time: 2 hours

1 cup cashews, soaked 2 hours

1/2 cup water

2 tablespoons lemon juice

1/4 teaspoon sea salt


Put all the ingredients in a blender, blend everything together until smooth. You can add more water if you feel that it is not smooth enough. Add the water gradually because you do not want it to be too watery.
