Zucchini Bread Recipe

Yields: Depends, the way you slice it!

Ingredients

  • 3 Eggs
  • 1 Cup vegetable oil
  • 2 Cups Sugar
  • 3 Cups Flour
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. Salt
  • 3 tsp. vanilla
  • 2 Cups zucchini, grated, unpeeled
  • 1/2 cup walnuts
  • 3 tsp. cinnamon
  1. Preheat the oven to 325 degrees. Stir together eggs, oil, sugar, and zucchini. Sift the flour, baking powder, baking soda, salt, and cinnamon together. Add to the zucchini mixture. Stir in vanilla and nuts. Pour into 2 bread pans. Bake for 1 hour. Check with a toothpick and then let it cool!
  2. Side Note-- Not a nut fan? NO WORRIES!! The nuts are optional!!
