Easy Zucchini Slice

Foolproof

For a super easy, healthy recipe you can't go past this zucchini slice. It's a breeze to put together, serves several people and is great to eat cold the next day if there's any left over. Perfect for a school lunch.


Zucchini slice is just about fool-proof...even a uni student could do it. You really can't go wrong, unless maybe you forget to put in the zucchinis, though even then it would probably taste alright!

Ingredients


Four small zucchinis or 2 really big ones

One cup of self-raising flour

One onion (finely chopped)

Two or three rashers of chopped bacon

A quarter of a cup of olive oil

Five or six eggs

One cup of grated cheese

Salt and pepper to taste


Method


Chop up washed zuchinnis, skin and all, in a food processor or by hand if you don't have one and place in a large mixing bowl. Add onion, flour, salt and pepper, bacon, oil and cheese and mix together. Lastly, add beaten eggs and mix in.


Pour into a slice dish or oblong casserole dish and cook in a moderate oven until firm and brown on top..approx. 35 to 40 minutes. Serve with a fresh garden salad and enjoy!

Tip: nice with tomato sauce/ketchup..especially if it's home made.
