Zucchini with tuna, overbacked
Hello dear readers, after a couple of Asian recipies I have decided to bring you something my girlfriend loves to eat. It is a healthy and very tasty dish which you can prepare very fast. Most people know the difficulties to bring your children to eat up their vegetables. The best way to do it is to start early and don't let your child eat what ever it want to eat. The adults need to educate the kids to be responsible and make to right choice in regard of food. Zucchini is one of the very healthy vegetable types which is not used in cuisine all too often, is it due to lack of knowledge or fitting recipes. Using this recipes I think everybody can enjoy the green cucumber-like zucchini.
- 2 zucchini
- 1 tuna, canned
- 1 onion, red
- 1 garlic
- sugar, brown
- vinegar, balsamico
- 1 mozzarella
- 1 tomato
- vegetable oil
- The zucchini. First of you need to wash the zucchini. The cut the vegetable in half trying to have both parts identical. Now take out the seeds and soft mid part. The best way to do this is take a coffee spoon and just take out everything with it. This way you create a little boats. salt the surface good and let the zucchini rest so the bitter liquid can come out. Then just wipe it off with a paper towel.
- The filling. Chop a red onion, tomato and garlic into very small pieces. put some oil on a pan and let it get hot. Insert the onion and let it get on some color and flavor. Add the garlic. After a little time add the brown sugar and let it caramelize. Add a very little vinegar. Put the tomato inside and add some salt. Let the mixture cool for a while. While still warm mix it well with tha canned tuna.
- Finish. Fill the zucchini boats so the filling is over the lid. Take your time and do it properly. Push the filling down and add some more as you don't want to have any free space inside. Cut the mozzarella info thin circles and cover the boats with it. Put the prepared zucchini into a preheated oven and let it bake for approximately 30 - 45 minutes.
Of course there are multiple ways how to serve the dish. Either you can take the whole boat and serve it on a nice plate or, and this i really prefer, you carefully cut the filled zucchini into two centimeter wide pieces what makes it possible to see the filling.
