My favorite is a concoction I created called Chipotle Chicken Salsa.
The only recipe I have makes a large batch - about 2 gallons
6 - Chicken breasts - cooked to your preference (I've found that grilling them adds an extra smokey flavor)
16 - 18 - large tomatoes - diced
2 - Large onions diced
1 - Can chipotle peppers - diced
2 - 8 oz cans black beans
1 - 8 oz can sweet corn
1/2 cup sugar
1 - Lemon (juiced)
1 - Head of fresh cilantro - de-stemmed and minced
1/4 cup vinegar
Salt and pepper to taste
It's on the spicy side.
