fresh lychees - 2 cups, peeled
unsweetened apple juice - 1 cup
ginger - a thin slice
1. Remove the stones from lychees and place in a sauce pan.
2. Pour apple juice on them.
3. Add ginger slice and simmer gently for 3-4 minutes.
4. Cool and place in the refrigerator.
5. Serve cold.
