Nutritious and Delicious is easy. There are some basics that make it easier even.
Use fresh ingredients from your farmer's market or from your garden.
Do not add a lot of fat or oil
Use fresh herbs and spices
Here is one simple recipe:
Asian Clay Pot Chicken
1 pound of fresh chicken cut into pieces without skin
2 onions chopped roughly
2 or 3 cloves garlic, chopped
2 sprigs of fresh thyme
8 baby squash
2 head broccoli
6 baby carrots
fresh ground pepper and sea salt
This requires a clay baker that has been soaked for 10 to 15 minutes.
In a skillet, sweat the onions for 4 to 6 minutes until that start to turn brown. Then add them to the bottom of the clay baker. Add the chicken and garlic to onions. Place the vegetables over the chicken and top with the sprigs of thyme. Salt and pepper to taste (it will not need a lot). Place the top on clay baker and place in a cold over. Set the temperature to 400 and cook for 30 minutes. Check to be sure the chicken is done through and if not put it back in the oven for a few more minutes.
This will give you a nutritious and delicious meal that will have great tasting vegetables and a natural sauce from the pot to server with the meal.
