Strawberries -- I don't think there's a way to freeze them without mushiness when thawed. Strawberries have such a high water content that I doubt there *is* a method that would work.
I use frozen strawberries for smoothies, and for baking into pies.
Peaches: if you slice the peaches, and fold them with sugar and lemon juice, they will thaw nicely. I've used thawed peaches in fresh fruit salads, and they were delicious.
