What causes home canned tomatoes to spoil when traveling from pacific coast to Kansas
I bet its the presser change, I have never driven that route, but I remember driving from Texas to norther New Mexico and colorado and your ears popping from elevation, From that distance there is bound to be highs and lows in elevation which will change the pressure against the jars, and it will release and let bacteria grow....just a guess though.

Dave this is what my uncle thought too. When he tried to bring his home canned tomatoes to Wyoming from Oregon he experienced the same thing.

Can I use fresh instead of canned tomatoes?I would like to use fresh tomatoes since I don't have canned. I have tomato sauce if that would help. It's a crock pot taco soup. Can I just cook them the same way I would make homemade spaghetti sauce?
