Most candida diets are avoiding specific carbs, so most flours are out. What exactly are you looking to make?
Some diets permit the use of nut flour or nut butter in place of flour. You can make something resembling bread by mixing nut butter, water and a few eggs and baking.
Some candida diets also permit the use of brown rice or buckwheat flour. You can use this to make pancakes or crepes. 1 cup brown rice flour, 1 cup water, 3 eggs (skip the baking soda or it will come out bitter tasting)
What you can use really depends on which candida free diet you are choosing to follow. Each one is a little bit different, although any will work if followed properly.
(ETA: Cornstarch is forbidden on every candida free diet I've come across.)
