Any useful smoker will need some metal working skills such as oxy-acetylene cutting torch and basic stick welding. They are usually made from steel drums of varying sizes. You will need to attach a firebox barrel to a cooker barrel for proper indirect heating. These will need to be attached to a sturdy metalwork stand, preferably with wheels for easy relocation. Go BIG. The bigger the better. A teeny smoker is as useless as a one man boat.
If you are careful, meats can be smoked in a large charcoal grill, by adding lit charcoal, and wood chips to the sides and keeping the meat in the center.More hot coals must be added throughout the duration of cooking. Brisket takes 12 to 15 hours to get done like this.(A lot of work but it can be done)
