Well, something with lamb would be appropriate. But instead of a roast leg of lamb or similar - which might be a bit much at brunch (depends on what time you are doing this), some possibilities might be:
Lamb & Pea Pie
Fry finely chopped onions (say, 1 onion) and minced garlic (1 -2 cloves) in olive oil until they are soft and just starting to colour.
Then add finely diced carrot (about 1 will do), diced celery (about half a stick), a bay leaf or 2. Fry for a few minutes.
Add minced lamb (or finely cubed lamb) - about 500g. Fry until the lamb start to brown.
Add tomato paste (just a teaspoon will do) and just enough stock to cover the mixture. Season with salt & fresh ground black pepper.
Simmer, overed, until the lamb is tender.
Leave to cool until you want to make the pie.
To make the pie, add fresh or frozen peas to the lamb mixture. Place in deep pie dish. Cover with puff pastry. Brush the puff pastry with egg yolk that has been beaten with a bit of water.
Using the tip of a small sharp knife, pierce the pastry in a couple of places to allow steam to escape.
Bake in a very hot oven (about 220C). Serve hot with green salad.
Another possibility is Sardinian lamb & fregola pilau. You can find the recipe for this one of my Hubs (Pasta: Industrial vs Artisanal).
