A nice one is pasta 'alla checca' 4-6 people.
You buy the very short pasta called 'ditalli' (DITALLI) and while you bring the large pan of salted water to boil, and boil the whole package for the time it says on the box and not a second more, you prepare these ingredients.
4-5 tablespoons extra virgin olive oil
1lb and half of tomoatos that are red and firm and sweet.
chopped basil leaves (about 10 of them).
Peel the tomatoes (drop them in boiling water for 30 seconds, then peel).
Squeeze the juice out of them so all you have is the pulp, chop them very small.
Put them in the pasta bowl you will be tipping the strained pasta in.
Add the olive oil, the chopped basil and the chopped up small mozzarella, salt. Mix well.
Add the pasta and mix very well. It is good hot, cold or tepid and travels well.
