I dice them into small cubes and cook them in a steamer. I add slices of red, yellow and orange peppers for great color. Chopped scallions are a nice touch. After they are done (6-10 min), remove from the heat and sprinkle a little lemon juice on top as they cool. I wrote a hub about my top 10 cookbooks on the kindle and one of books was "30 recipes for sweet potatoes". I love using sweet potatoes instead of regular potatoes. They are so much more healthy. I use sweet potatoes in salads and stirfry on a regular basis.
