I forgot to add the margarine to a premade muffin mix. They're currently in the oven. Will there be a big difference?

In muffins, you can replace all or some of the oil/marg./butter with applesauce. You may notice a difference, but you may not. It is a great way to save calories/fat.

They might be a little dry. Yes, I like the idea of adding applesauce - makes a great taste and does save the calories.
They'll be a little drier, but you can always claim you were trying to make healthy muffins. :)
Your dough will not hold together and it will not taste as good!
