Here's an easy one that is really good.
1 C sugar
2/3 C pumpkin
1 t soda
1/2 t salt
1 t cinnamon
3/4 C flour
Combine eggs, sugar and pumpkin; beat 5 minutes. Add remaining ingredients; mix together well. Line large cookie sheet (with sides) with waxed paper. Spread batter; bake 15 minutes (or less) at 375 degrees.
Let stand for 5 minutes. Powdered sugar the top of cake, lay a large, thin dish towel over the cake and flip. Peel the wax paper off. Powdered sugar the other side of cake. Roll lengthwise with towel and let cool completely.
Unroll, fill with filling (below) and re-roll. Cut in half to make two rolls. Refrigerate or freeze.
1 8 oz. cream cheese
1 t vanilla
2 T butter
1 C confectioners (powdered) sugar
I have also added finely chopped walnuts to the cake. And, also, mini chocolate chips to the filling are good (not too many).
