I love cooking with garlic and I have found there are two main methods to using it in a dish in order to get the best flavour.
1. If you want your garlic to have a sweeter taste, then you should cook it on a low heat in a little oil just until it is browned. However it is essential that you do this on a low eat otherwise the garlic will burn and taste bitter.
2. If you want the full garlic flavour I usually either finely chop or use use a garlic press and add towards the end of cooking this allows it to be cooked into the dish without becoming bitter.
And as a fellow garlic monster I also like to add some garlic oil/concentrate to ensure it has a really strong flavour.
