I like to make oven fried chicken for my family.
I take two sleeves of Ritz crackers and crush them into fine crumbs. I add a little garlic salt and just enough melted margarine to moisten the crumbs. If you use too much margarine the crumbs become too mushy.
I butterfly a boneless, skinless chicken breast and dip it in egg white. You can either separate the whites from the eggs yourself or you can use egg beaters. I then roll the chicken in the cracker crumbs and place it on a cookie sheet coated with cooking spray.
I bake the chicken at 350 for an hour and it comes out tasty and juicy. My kids like to dip the chicken in BBQ sauce, but I think it tastes perfect as is.
