I do eat the skin on rollmop herring. I'm pretty sure that there's no reason not to. Looking forward to seeing other answers you get.

How funny, I never thought of Not eating the skin
I always eat the skin, but check it for blemishes or damage first. Do I need to mention the dorsal fin should not be eaten? (Because it is tough! No other reason).
Yup, never minded it, I had them in Brazil though so they might be a little different to the English and German ones. Surprisingly addictive though.
I should have said that as I'm a veggie, it's been a long time since I ate one of the beasts and when a friend asked me, I couldn't remember!
