Eggs are great for cheap quick meals.
You could do a simple Chinese home-style steamed egg custard (savoury) with or without some pork mince, stir fry some green vegetables (like baby bok choy) and serve with steamed rice. Easily serves 2 - 3 for less than $10.
A vegetable fritatta is also delicious.
And if you like tripe, this is one of the cheapest proteins. Lots of delicious possibilities with tripe eg braise with tomato sauce.
Chinese homestyle dishes are particularly good for making a small amount of protein go a long way. Steamed fish, stir-fry veg and steamed rice will serve 2 people for less than $10.
