Growing up in Florida, I'm partial to Salt Water Fish. Grouper, Snapper, Mahi Mahi.
One of my favorite recipes is "Snapper Veracruz" -- you basically saute onions, green pepper, capers, tomatoes, olives, in some white wine and when the onions are about 3/4 done you lay the snapper on top.
I think it's amazing that there are people up in the northeast that don't eat fish at all. Growing up in South Florida, I probably ate as much fish as chicken or beef.
FYI - I do love trout, baked with some kind of breadcrumb crust, glass of white wine, .......hungry, gonna go eat something now.......
