I have been slowly changing my diet to include more fruits and veggies. I have been accustomed to eating and cooking tacos, burritos, sandwiches, spaghetti, enchiladas, and many others. I am encouraged to make the switch because I am tired of reading food labels that have ingredients with scientific names and are a paragraph long. Personally I love salads, all root veggies, and many other fruits and veggies. I end up cooking two meals because my boyfriend doesn't like veggies or meatless dishes. His son has also been conditioned by society and his grandparents to eat packaged foods. Good question.
