   Have you ever canned homemade rotel?
   
   I am about to cook and can homemade rotel tomatoes and peppers.

   No, but when I had a garden I made out of sight bread and butter pickles and kosher dills.  Just follow the receipe and it will be great.  I wish I still had my garden.

      You are so right there is nothing like growing vegetables to sooth your soul and feed your body.  Good luck with your rotel.

   Yes. It is easy. Make a small test batch first. Otherwise you might not find the perfect combination of tomatoes and peppers.

   Yes I have and it was so good. There is nothing like making your own but one better is making it up and freezing it. Frozen tomatoes are just so tasty, they beat canned anytime. I am making chili now with ones I took from the freezer and you can taste them before you put salt or anything and just see what a fantastic flavor there is, and what could be easier? Make your rotel, let it cool and freeze in an airtight bag. Don't put salt though until you thaw it.

   Absolutely! I have canned it and I have frozen it. i prefer to freeze it because the flavor is so much better. I use it in winter soups, meatloaf, and many, many casseroles. Go for it! Few things are simpler or tastier!

   Made yes, canned no.
   I've never made enough at one time to can any. And really have never thought about canning anything.
