The cooking oil on the hands is a great idea to reduce the possibility of latex stains on your hands. We have a green plantain here in Costa Rica that is called a cuadrato (guineo) that is boiled and served in soups.
So, you end up with fried banana patties?
Good suggestions drmark. I will have to try some of these ideas. I experiment with tropical foods. Drying them could lead to some interesting possibilities.

I didn't know Bananas Foster used green bananas, but I have never had this dessert.
Actually, green bananas have a latex-like sap, perhaps that is what you are allergic to. The sap is converted to sugar when it ripens.
I have severe allergic reactions to the latex in mangos but with green bananas the problem is not severe; they must be cooked and if you get the chemical on you during preparation it can be removed with soap and water.
