I have an allergy to onions but so many recipes call for them. Is there a good substitution I can use in soups, casseroles, etc?

If you are allergic, then onion powder isn't an option. I think powder is more potent than raw onion. Maybe fennel or ginger. Celery may be an option as well.

Ginger and celery are great suggestions - thanks Audrey!
I just dislike the taste of onion. I usually substitute a shallot for the onion in most recipes. They're smaller, and have a taste and odor closer to garlic. Hopefully you aren't allergic to them too!
There is a good chance that you will find onion powder or onion flakes among the spices. Both options are a great substitute for onions.
