Can you separate coconut milk after it has been poured out of the can?

I want to separate some coconut milk for a thicker 'cream'. Most recipes say to leave the open can in a fradge for hours, but I've heard you shouldn't keep food in metal containers when in the frdge~ so will pouring it out stop it separating? If so do you know any other way to get it to separate? Cheers! x
