I don't pickle it. Cauliflower can be cut off the stem into bite size pieces and frozen in your freezer in zip-lock bags. You don't use water or anything, just cut and freeze it. It can be thawed out for stews,soups,even casseroles. It might not retain the crunch of cauliflower for eating it raw but you can keep it frozen for summer use easily this way.
