Use a good quality vegetable oil
heat the pan over medium high heat for a minute or two before putting the eggs or oil in.
When the pan is good and hot, add about 1-2 tablespoons of oil.
Tilt the pan a few times and coat all sides with the oil.
Crack your eggs into a bowl and then pour them into the pan.
If you are making scrambled eggs, go ahead and start scrambling them when the bottom just starts to set.
If you are making over easy/medium/hard, wait for the white to start setting, then gently flip the egg.
It's important to keep the pan HOT while you are cooking the eggs, otherwise they will stick.
