I will have it maybe 2 times a week. Most of the time it is brown rice. I used to get instant rice, but all the nutrients in instant has been nearly removed and it just is filler.
One of my favorite ways to make rice is:
In a medium pot, place 2 tbsp Olive oil, 1 tbsp vegetable oil, pinch salt, add 1/2 cup chopped onion, (yellow onion or white) 4 stalks green onion chopped, mix in pot and cook at medium high heat till the yellow onion is translucent or just getting soft.
Add rice. Cook a bit till you see the rice begin to turn slightly brown. Add hot water.
Cover and simmer for 15 - 20 minutes reducing heat.
Another great recipe which my wife and I enjoy is called Crabby Potatoes.
1 - 2 baker potatoes.
2 cans real crab meat.
2 tsp butter
2 tbsp olive oil (extra virgin)
2 stalks green onion
1/2 cup cream (this is not a diet food)
2 tbsp corn starch mixed with the cream
preheat oven at 375F
Prepare baker potatoes by washing the potato with warm water scrubbing off dirt.
Rub potato with olive oil (separate from the olive oil that your going to use in the sauce.) sprinkle with a bit of salt, and some pepper all around the potato.
Bake in a preheated oven (you know you should always preheat ovens) for 30 minutes or till you can stick a knife in the middle of the potato without any resistance.
Take potatoes out of the oven and let stand for 5 minutes.
1.melt butter with olive oil in a small saute pan or small skillet. add green onion and canned crab.
2.heat at medium high for 5 minutes.
3.Add cream and cornstarch slurry.
4.stir till thickened and lightly coats back of spoon.
Cut open potato, pushing in at the long ends of potato to make a pocket.
Pour a bit of the sauce over potato, serve with a nice piece of fish or chicken breast and some steamed vegetables.
