Something with fruit. Maybe a mixed berry meringue tart, or a fruit jelly (when the jelly mix has cooled, put the fruit into the jelly mould and pour the cooled jelly mixture over) and of course, there's always ice cream or sorbets. How about Tiramisu ice cream just for something different?
Make a cantelope (rock melon) sorbet, sandwich it between hazelnut meringue and freeze. When ready to serve, cut thick slices for each guest and serve with chilled raspberry coulis. [At some stage, I'll make a hub about this.... :) ]
