That depends on what you used to substitute the eggs for in your cookie recipe. One thing I love to substitute eggs with in my baking recipes is arrowroot powder. It's full of B vitamins and gives baked goods that nice chew everyone loves. Basically you use 1 tbs. of arrowroot mixed with 1 tbs. of room temp. or cold water for each egg you are substituting for. You can find arrowroot powder/flour at any health food store, some local grocery chains, and on the internet on websites such as amazon. Hope this helps!
