Does it need to breath all of the time? Did it have multiple eyes?

During the aging process, bacteria that is specific to Swiss cheese forms. The bacteria gives off carbon dioxide, which forms bubbles in the cheese. When the bubbles pop, the holes are left behind.

I get store brand Swiss cheese pre-wrapped slices which do not have holes.

That would be a 'processed cheese food' type of product. It usually consists of re-melted scraps from cutting the large block or wheel of cheese into small blocks for retail sale.
