This is not a recipe as such; but, I find this meal to be very satisfying. I take a roasting pan and melt some coconut oil in it. While I am preparing the vegetables, I place the roaster over a low heat on the stove and lightly fry my spices in it. I always add a small red chili pepper, salt, and pepper. I add my other spices depending on the vegetables. Then I add my vegetables and coat them in the oil. Into the oven at 350 degrees for about 1/2 hour or so. About halfway through the cooking I add garlic cloves just because I love cooked garlic.
When it is all cooked, it is the most delicious meal. Don't forget to turn your veggies when you add the garlic for even coating and cooking.
