Pudding or custard is a great filling for them, Jackie. A bakery I shopped at in Washington filled their cream puffs with a rich, creamy custard and it was wonderful to bite into one.

They are very good and so easy to make! I made them just after asking this question. Can't wait to try different kinds. I also froze some up.
