I do (Just did a batch today) and I love the flavor so much more. I just skin them and dice and cook until they are bubbly hot then cool and freeze in zip bags or plastic bowls. Do you ever do this and don't you think the flavor is just fantastic?

No I don't cook them at all, just puree and freeze them. You don't need to cook them till after they are defrosted.

I discovered it about the tomatoes by accident one year running out of jars. Great discovery.
Up until I started freezing I thought home canned were good but found out not near the fresh taste! And so much easier.
I am sure you will love it; only set back to freezing is if you have a power outage and in that case canned would be better. I use to do both but now I just take my chances. lol
