Here's a recipe on making Strangozzi noddles:
Strangozzi (homemade noodles)
3/4 lb. white flour (600 grams), 3 egg whites, warm water, salt
Make a well with the flour. Pour the egg whites, 1/4 cup warm water and 2 tsp salt into the well. Mix with your hands,
adding flour to the liquid until it forms a hard dough. Knead dough until it gets smooth and let it sit for a while covered
with a bowl. Roll the dough in a thin layer, place on a cloth and let it dry. Cut the dough into thin strips 1/4 inch wide.
