Rosemary, sage, thyme, parsley, basil and oregano always go great with chicken. Sage, tarragon, chervil, parsley, thyme and rosemary go great with pork. Really though, most fresh herbs are interchangable between the two though certain preparations place an emphasis on using certain herbs. If you're just starting out though, do your chicken with rosemary and garlic, and your pork with sage and thyme. Just remember that using fresh herbs is better than using dried.
