Easy Asparagus Casserole

This Easy Asparagus Casserole Recipe is one that my mom used in the 1960s, and I remember how much we all enjoyed it.Years later when I was single and teaching, I shared an apartment with 3 other gals. We each were responsible for taking a week each month to do the cooking. They always asked me to make my mom's recipe. Then, when I got married, I made it for my husband and found out that the whole family enjoyed it. Little did anyone realize how easy it is to make.Actually, I don't really know why we have always called it an Asparagus Casserole because it could have just as easily been called a Green Bean Casserole or a Green Pea Casserole. No matter what it is called, it is good or at least we have enjoyed this recipe for the last 50 years. This is now one of my hubby's favorites and it sure is easy. All you need is a good can opener.So, this recipe has been around for a long time! I hope you will try it and enjoy it as much as we do. This is as easy as opening 5 cans but it is good enough to get 5 stars. My family really enjoys this one and they have no idea how easy it is.

  • Prep time: 15 min
  • Cook time: 30 min
  • Ready in: 45 min
  • Yields: 10

Ingredients

  • 1 can Asparagus, Drained
  • 1 can French Style Green Beans, Drained
  • 1 can Cream of Mushroom Soup
  • 1 can French Fried Onions
  • 1 can Tiny Green Peas, Drained

Instructions

  1. Preheat Oven 350 degrees
  2. Drain the canned vegetables and empty into casserole dish with the Cream of Mushroom Soup. Blend together
  3. .Bake for 25 minutes or until bubbly.
  4. Top with Onions and continue baking for 5 more minutes or until lightly brown.

My mom's secrets

My mom always used French Style Green Beans with Pimiento, but I haven't seen that kind lately. You can omit the Pimiento if you want to. I have also sprinkled Parmesan Cheese on it and, you could add water chestnuts. The secret is to not let your french fried onions burn. Let your casserole cook before adding them and then cut off your oven and just let them warm.It is now hard for me to believe that I liked this growing up but I don't guess we were very picky eaters. I remember liking most anything that was put on the table except for fish. I just never cared for fish and luckily mom didn't serve it very often.Just because it is so easy, doesn't mean that it isn't good!

I used to really hate to have to use our can opener. It was such a hassle but now that we own this Hamilton Beach Can Opener, it is so easy and actually fun. I even get excited about opening a can. After about one year, a part fell off so I called the company and they replaced it with a new one.

This reasonably priced can opener is the best one we have ever had. I love that it opens on the side with smooth edges. It really is amazing and I am so glad that we have one. This would make a great gift, too, especially for seniors. It is so aggravating to have one that doesn't work well and can be frustrating. This one really is very reasonably priced and you may think it is something cheap. It is really almost too good to be true but I promise that it is true.

Now you are ready to put it all together

It is an easy peezy Asparagus Casserole Recipe

Open the cans of beans, asparagus and peas. Drain. Drain the pimiento. Mix together in casserole dish with 1 can of Cream of Mushroom Soup. Cook for 25 minutes and then top with onions. Cook for an additional 5 minutes or until onions are lightly browned.See, it is Easy Peezy!

Warning: The onions are easy to burn so watch them carefully.

Keep these canned goods in your pantry so you can throw this one together at the last minute.

      We love green bean casserole. It is always the first dish to disappear at family gatherings. This is quite similar, although we usually add cheddar cheese to the mix. I think I'll give this a try. It will be a nice change.

      It might be putting various tinned goodies together - but very convincingly a great one to try thank you! Depending on the amount of people, I use the same with double the mushroom or asparagus soup, a tin of whole tomatoes reasonably chopped, a punnet of fresh muschrooms over a few chicken pieces - preferable to cook the chicken a good percentage prior to popping in the oven with the rest.

      I'll have to give this a try! Funny, I never considered using asparagus in a casserole. I can remember my grandmother serving it on toast, like an open-faced sandwich. I usually just steam it, or cut it up raw and add to my salads.

      I love asparagus any way it's prepared ~ even straight out of the can. This recipe sounds delicious because it has the beans and peas as well. Loved the picture of the ingredients and the final product. The parmesan and water chestnuts sound good too. One Easter my mama had some asparagus shipped to me from California. Those long, thick, juicy stalks were the best I've ever tasted ~ just steamed with salt and butter.

      My favorite casserole, one I grew up on and the only one my hubby would eat, is known in England as "Shepard's Pie" - hamburger, creamed corn, mashed potatoes, etc. You've all heard of it, I'm sure. :).
