Avocado Lime Cheesecake- Mexican Food

I have always like Mexican cooking recipes and especially like avocado lime cheesecake. This recipe has been in my family ever since I can remember. Avocados are naturally creamy in texture and although most people don't think of them in a dessert recipe but they certainly add to the flavor combined with lime in my cheesecake. I think this is one of the creamiest cheesecake I have ever eaten.

Most Mexican recipes tend to have heavy seasoning for flavor especially the main dishes. However,this avocado lime cheesecake recipe has more extreme flavor than American ones. This cheesecake recipe is one of those that combines the mild flavor of avocado with the sour flavor of limes. This create an unbelievably rich and creamy dessert with great texture and flavor in one dish.

I have always enjoyed baking and like to experiment with recipes. My mother used to purchase a graham cracker crust for this avocado lime cheesecake recipe. I like to change some of my recipes so another version of the crust I make is to use ý box of commercial pound cake mix with a stick of melted butter for the crust. I pre-bake the crust at 350 degree F for about 20 to 25 minutes and allow it to cool before filling it with the cheesecake filling.

Mexican Avocado Lime Cheesecake

1 prepared graham cracker crust

1 ½ cups of cream

¼ cup of sugar

In a pan heat the cream until bubble form on the edge of the pan. Remove from heat and stir in sugar until it melts. Pour into a bowl to cool.

Recipe

6 ounces of cream cheesecake

½ cup lime juice

1 ½ peeled diced avocados

Place into a food processor and blend until smooth and place in a bowl. Then slowly add the cool cream and sugar mixture and blend into the mix with a whisk until smooth. Return entire mixture back into food processor bowl with blade in place. Place into a freeze until solid. Then remove the bowl from the freezer and place onto food processor and blend on low until mixed. Do not over mix. Pour entire mixture into a prepared graham cracker pie crust and smooth with a rubber spatula. Cover with foil or plastic wrap and place pie into the freezer for at least 2 hours before serving.

      I love avocados and start every morning (after an early walk) with an avocado with lemon juice, salt and pepper. Never thought about using them in a "cheesecake," but this sounds interesting enough...and, more importantly, EASY...to make!
