A Cheater Recipe For Baked Beans

The best-ever EASY baked beans recipe really is EASY and it really is YUMMY and, confession time, it is a cheater recipe or a concoction. By that I mean, you start with CANNED BAKED BEANS. (Don't tell anyone.) Canned items are not usually something I cook with. However, sometimes, when I am preparing a number of side dishes for a summer BBQ, I like to take a shortcut and these baked beans are one of the shortcut recipes I use.

Originally seen on Martha Stewart Living more than a decade ago, I have created three different versions of this recipe so that you can cook the one that makes an appropriately sized dish for the two of you, the family or even a crowd.

Whether you serve it simply as a side, as an addition to a hot dog or hamburger supper or take it as a potluck dish, you'll love these baked beans. They can be prepared, baked and eaten; prepared and baked later;or prepared, frozen and baked later. They're even great for camping, whether you prepare them in advance or prepare them on the spot. They can be cooked in the oven or on the BBQ or even over the campfire.

Easy Baked Beans Recipe For Two People

You can use whatever brand of baked beans with salt pork and molasses that you like but I always check and choose the one with the lowest fat and sodium content. There can be a big difference between brands. Also, you could substitute beans in tomato sauce and you could certainly choose to spice up these beans up, if you so desire.

Prep time: 10 min
Cook time: 1 hour 15 min
Ready in: 1 hour 25 min
Yields: 2

Ingredients

  • 14 oz can baked beans with salt pork and molasses
  • 1/6 chopped green pepper
  • 1/6 chopped onion
  • 1 tbsp BBQ sauce
  • 1/8 tsp worcestershire sauce
  • 1 tbsp brown sugar
  • 1/3 tbsp mustard

Instructions

  1. Preheat your oven to 350 degrees. Then simply stir all of your ingredients together in an ungreased casserole dish and bake, uncovered for 45 minutes, stir and continue to bake for 30 more minutes. This recipe freezes well.

Instructions

  1. Preheat your oven to 350 degrees. Then simply stir all of your ingredients together in an ungreased casserole dish and bake, uncovered for 45 minutes, stir and continue to bake for 30 more minutes. This recipe freezes well.

      My hubby makes the best baked beans. It looks somewhat like this recipe, however he doesn't give exact measurements ... just a little of this and that. Guess I won't be copying his recipe.

      I will definitely try your baked bean concoction! Too many times I just use baked beans right out of the can and even the flavored ones are pretty boring. This recipe sounds really good - and my husband will love it, I'm sure.
